Anwendungen
Kaliumsorbat dient als Hemmstoff für Schimmelpilze, Hefen in vielen Lebensmitteln wie Käse, Wein, Joghurt, Trockenfleisch, Apfelwein, Erfrischungsgetränke, Fruchtgetränke und Backwaren. Es wird zur Herstellung von Sirup, Milchshakes, Cremes, Lotionen, Shampoos, Make-up und Sonnenschutzmitteln verwendet. Es wird hauptsächlich verwendet, um die Haltbarkeit verschiedener kommerzieller Produkte zu erhöhen, ohne dass Geschmack, Geruch und Farbe der Lebensmittel beeinträchtigt werden. Es wird als Konservierungsmittel verwendet und gilt als Ersatz für Parabene.

Löslichkeit
Löslich in Wasser, Alkohol, Propylenglycol. Geringfügig löslich in Aceton und Chloroform, Maisöl und Ether. Unlöslich in Benzol.

Nicht kompatibel mit starken Oxidationsmitteln.
