Citric acid is a starting point in the Krebs cycle and is a key intermediate in metabolism. It has anticoagulant activity; as a calcium chelator, it forms complexes that disrupt the tendency of blood to clot. It may be used to adjust pH and as a sequestering agent for the removal of trace metals.

Anwendungen
Zitronensäure ist ein Ausgangspunkt im Krebszyklus und ein wichtiges Zwischenprodukt im Stoffwechsel. Es hat eine antikoagulierende Wirkung; als Calcium-Chelator bildet es Komplexe, die die Tendenz des Blutes zur Gerinnung stören. Es kann zur Einstellung des pH-Wertes und als Komplexbildner zur Entfernung von Spurenmetallen verwendet werden.

Löslichkeit
Wasserlöslich. Auch in Alkohol und Methanol löslich. Nicht in Chloroform und Benzol löslich.

Hinweise
Hygroskopisch. Nicht kompatibel mit Oxidationsmitteln.
