Anwendungen
Das wichtigste der Provitamine A, β-Carotin, kann aufgrund seiner Hemmung der radikal initiierten Peroxidation in vitro als Antioxidans eingestuft werden. In vivo scheint es jedoch je nach zellulärer Umgebung entweder als Antioxidans oder als Prooxidans zu wirken. Verringert die Inzidenz vieler Krebserkrankungen.
